
Chitin, also known as chitin, chitosan, or chitosan, has the molecular formula C₆H₁₁NO₄X₂ and a molecular weight of 161.16. It is a natural nitrogen-containing polysaccharide composed of N-acetylglucosamine units linked by β-1,4-glycosidic bonds. It appears as a white to pale yellow powder or flaky solid, is insoluble in water and common solvents, and is chemically stable; upon deacetylation, it yields chitosan. It is primarily derived from shrimp shells, crab shells, insect exoskeletons, and fungal cell walls.
