
Cinnamaldehyde, also known as cinnamic aldehyde, is an aldehyde organic compound with the chemical name trans-3-phenyl-2-propenal (all natural forms are of the trans configuration), MF: C₉H₈O, MW: 132.16. It is a pale yellow oily liquid with a rich, persistent cinnamon aroma and is the primary component of cinnamon oil and cassia oil (70%–95% content). It serves multiple functions, including as a flavoring agent, preservative, and medicinal ingredient, and is low-toxicity and safe.
