Isoeugenol (MF: C10H12O2, MW: 164.2) is a pale yellow, slightly viscous, transparent liquid with a mild, sweet, and fresh aromatic scent and floral notes reminiscent of carnations and cloves. It belongs to the phenylpropanoid class of compounds. It is slightly soluble in water and glycerol, but readily soluble in ethanol, diethyl ether, and most other organic solvents. Chemically reactive, it undergoes oxidation, acylation, and alkylation reactions. It serves as a core raw material in the flavor and fragrance industry and an intermediate in vanillin synthesis, and occurs naturally in essential oils such as clove, nutmeg, and ylang-ylang.
