It is a disaccharide alcohol produced by the enzymatic conversion of sucrose to isomaltulose, followed by catalytic hydrogenation. It appears as a white to off-white crystalline powder, is odorless, has a sweet taste, and possesses a sweetness level of approximately 45–65% that of sucrose. It is characterized by low calories, a low glycemic index, non-cariogenic properties, and high intestinal tolerance.
