Octanal (MF: C8H16O, MW: 128.21) is a colorless to pale yellow transparent liquid with a strong fatty aldehyde odor; when highly diluted, it exhibits a pleasant sweet orange aroma. It belongs to the class of saturated fatty aldehydes. It is chemically reactive, readily oxidized to octanoic acid, and capable of undergoing condensation and addition reactions. It serves as a key raw material in the fields of fragrance and flavor, food additives, and organic synthesis, and occurs naturally in the essential oils of plants such as citrus, rose, and apple.
