Polysorbate 80（Tween 80）, is a nonionic surfactant synthesized by the polymerization of sorbitan monooleate with 20 molecules of ethylene oxide. Its molecular formula is C₆₄H₁₂₄O₂₆, and its average molecular weight is approximately 1309.68. It appears as a pale yellow to amber-colored, oily, viscous liquid with a characteristic odor and a slightly bitter taste; it becomes gel-like at low temperatures but reverts to its original state when heated.
