Potassium sorbate (MF: C6H7KO2 MW:150.22) is the potassium salt of sorbic acid, appearing as a white to pale yellow powder or granules. It is odorless or has a faint odor. When stored in air for extended periods, it readily absorbs moisture and undergoes oxidative decomposition. It is highly soluble in water. Potassium sorbate exhibits potent inhibitory effects against spoilage bacteria and mold, and its high water solubility contributes to its widespread application. Its ability to inhibit bacterial growth is stronger than its bactericidal effect, and its antimicrobial activity increases with decreasing pH.
