Xanthan gum (MF: C8H14Cl2N2O2; MW: 241.115) is a high-molecular-weight polysaccharide polymer produced through aerobic fermentation by Xanthomonas campestris using carbohydrates as the primary substrate. It exhibits “high viscosity at low concentrations” and “shear thinning” properties. In aqueous solutions, it forms rod-like double-helix structures that interact via hydrogen bonds to create a network structure, which underlies its high viscosity and unique rheological characteristics.
